Weight Watchers Chocolate Cupcakes – 52 Weeks of Pinterest

These Weight Watchers Chocolate Cupcakes are not to be missed! At only 2 WWPP each, you can eat more than one with no guilt!

I came across the coolest challenge earlier tonight – 52 Weeks of Pinterest.  If you’re like me, you’ve pinned and pinned so many things that you think you’ll get around to doing one day.  Well, today is that day.  🙂  

Introducing the 52 Weeks of Pinterest Challenge!  I found this over at Glitter on a Dime, and right away, I knew I had to participate in it, too.  I’ve been pinning on Pinterest like crazy lately, mostly Weight Watchers recipe ideas since once of my 2018 New Year’s resolutions was to lose weight.  And just within the past week, I’ve been trying some of them out.  That means this challenge came along at the perfect time!  Since I missed being able to post last week, I’m going to double up on posting this week.

52 Weeks of Pinterest

My first Pinterest venture were these really tasty looking Weight Watchers Chocolate Cupcakes.  (And just to be clear on the WW version I follow, I’m using the Points Plus system.)  I had already been on the diet for about 4 days, and my sweet tooth had come around to say “hello.”  Fruit was not cutting it anymore…this girl was craving chocolate.  Needless to say, I was so very excited to find this recipe

Now, the blog post is about 6 years old, and I don’t think it’s been updated or offers any new comments from the main author, but the relevant points are all there.  I mean, the chocolate points are really all that matter, right?  😉

I had both the cake mix and the soda on hand in my kitchen, so this was already an “eating from my pantry” success story before even being able to taste them.

Here’s the gist of the recipe –

  • One box of cake mix (any type of chocolate flavor will do, but I used Devil’s Food Cake for this recipe)
  • One 12 oz. can of diet sodaDiet Dr. Pepper was what I had on hand
  • Bake according to the temperature on the cake mix box, and make exactly 20 cupcakes.
  • Cook for approx. 15-16 minutes or until a toothpick inserted in the center comes out clean.

That’s literally it.  No, I’m not kidding.

I couldn’t believe that I didn’t need to add anything else.  No oil, eggs, water…nada.  Just the mix and the soda.  But here’s a tip – dark mixes need to go with dark sodas.  I’m planning to try this with a white or yellow mix and a Sprite Zero, so we’ll see how it compares.

Now, the one area where I didn’t match the original recipe was the cooking time.  She stated that she only needed to cook hers for 10 minutes; mine took closer to 15.  I tested them at 10 minutes, but my toothpick did not come back clean until after 15-16 minutes.  But hey, every oven is different.

How did they taste?

Simply delicious.

I mean, really.  They were so light and moist.  It is a slightly different texture from a cake that has eggs, oil, etc. in it, but trust me, these were great for only being 2 WW points.  And they filled the immediate sweet tooth I had.

However, I do have one small observation/complaint.  After a few days, they get almost too moist.  The cupcake wrappers have started to separate from the cake, and they stick to my teeth more now than they did during the first 48 hours since baking.

Would I make them again?

Definitely.  What’s not to love about chocolate?  And I love the cracked top – reminds me of a cookie.  😉
